Harvest July 5-11

Ingredients in ( ) are from my pantry, everything else from CSA!

Atlantic salmon, sugar snap peas (w/rice pilaf)

Salanova greens, tomatoes, cucumber (carrots, grilled chicken marinated in balsamic marinade)

green beans, tomatoes, (mozzarella, basil from my garden, grilled chicken, balsamic vinaigrette)

Beets are an acquired taste but once you discover this sweet earthy root vegetable, you will be hooked. These are now available from the CSA, I had a bunch with 7 bulbs. Wasn’t sure what to do with them and there were no takers to share with…..So I found a recipe for pickled beets, super easy, and plan to make a salad in the coming days once the flavors have seeped in from sitting in the refrigerator for a few days.

Visit soon to see a delicious salad made with these yummy pickled beets using fresh greens from the CSA as well as some local cow’s milk cheese with garlic and sesame seeds.
