Homemade Creme de Menthe Treats

OK, I was not going to post this recipe because I cannot take any credit for it.  My sister made these a while back for some holiday or get together, she gave me some to take home, and I just thought they were so amazing.   I brought some of them to work and they did not last more than a couple of hours.  Way better and more rich than the kind you buy at the store wrapped in the green foil, packaged in the neat rectangular box. 

So, recently, my sister sent me this recipe which was hand written on a crinkly piece of note paper by a long-time friend of the family going back more than 30 years.  Anything this woman cooked or baked was exceptional.  I used to go camping with her daughter, my sister when to college with her son, my husband and I were friends with a friend of their son who also went to college with them.  Are you lost yet?  I am, the point is, she passed this recipe onto her daughter and it was shared with my sister, and now she has shared it with me.  This is my first attempt at making them.   Again,  I did bring them to work again for a work party and the reaction was ‘OMG, I want that recipe!’   So this week, I post the recipe in honor of  this wonderful woman.

ps …. the quality of this image is not the greatest and doesn’t capture how delicious these really are.  And they can be a bit messy when cutting them.  I did NOT do this but I would recommend scoring them into your desired size sooner than later so that the top chocolate layer doesn’t get too crumbly.  I will need to make these again to experiment with a better way so the presentation is more ‘professional’ looking.  If anyone finds a good solution, please comment below.  

Homemade Creme de Menthe Treats

decadent and addictive, these are perfect for xmas sharing or for a sinful sweet at your fingertips....best cold right out of the frig

Ingredients
Bottom Layer
  • 1/2 cup unsalted butter
  • 1/2 cup cocoa powder
  • 1/2 cup confectioner's sugar
  • 1 egg, beaten
  • 1 tsp. vanilla extract
  • 2 cups graham cracker crumbs
Middle Layer
  • 1/2 cup unsalted butter
  • 3 cups confectioner's sugar
  • 1/3 cup creme de menthe liquor
  • 1-2 tsp. peppermint extract optional, for added 'mintyness'
Top Layer
  • 1/4 cup unsalted butter
  • 1 1/2 cups chocolate bits, 60% cacao, bittersweet any type of chocolate, for personal preference
Instructions
  1. Bottom Layer:  Combine butter and cocoa powder, heat in saucepan over low heat. 

  2. Remove from heat, add confectioner's sugar, egg, vanilla, graham cracker crumbs.  Combine well.  Press into 13x9 ungreased pan.

  3. Middle Layer:  Melt butter, then off heat, add confectioner's sugar, creme de menthe and peppermint extract if using.  

  4. Combine until well incorporated. Spread over bottom layer. Chill 1 hour.

  5. Top Layer:  Combine butter and chocolate bits over low heat until melted.  

  6. Spread over middle layer.  Chill 1-2 hrs. 

  7. Cut into desired shape. Stores well in refrigerator in covered container.
