Tomato and Cucumber Salad with Toasted Almonds

~ Chop tomato and cucumber into bite-sized pieces
~ Season with salt and pepper to taste, a dash of garlic powder and onion powder (optional)
~ Give a good drizzle of olive oil, a dash of balsamic

vinegar (~2-3 tsp.),
~ Toss to coat and let sit for ~ 10 min.
~ Alot of water will come out of the tomatoes and cakes, totally normal, so when you serve into your bowl use a slotted spoon to scoop out the salad.

~Nice additions might be chopped celery, fresh mozzarella balls, red onion
