I make this so often I decided to add it to my blog and maybe inspire others to add it to their own repertoire of staple recipes. This year is the first time I have made homemade english muffins which brings this simple breakfast sandwich to a whole new level!!
For keeping it simple, and for the sake of keeping a clean stove and avoid the need to put the oven on in the hot summer months, I tried microwaving the bacon as my mother-in-law highly recommends. I was skeptical but lo-and-behold, I had turned out beautifully crispy bacon in a matter of minutes with no turning, no splattering, and the added benefit that most of the bacon fat is absorbed by the papertowels, and super easy clean-up.

scrambled, over easy, even soft or hard boiled (enough so the yolk is only partially oozey goodness
bacon
line plate with 2 paper towels, lay bacon flat, cover with 2 paper towels, microwave on micro-safe plate 4-6 minutes for desired crispiness.
cheese
any variety will work, this is a reserved cheddar sliced fairly thin to allow for melting once placed on the warm egg
toasted and lightly buttered but you can opt to not toast or butter, it would be equally satisfying
