Talk about ‘FOOD EQUALS HAPPINESS’!
This is the ultimate. My mom made this for special
occasions like birthdays or when company came for dinner.
But she also made it at other times
JUST BECAUSE SHE COULD………..
This recipe shot is taken directly from my personal
cookbook and is exactly the same way my mom had
it in her cookbook, all neatly typed and
organized by category.
Handwritten notes obscure the instructions but since
my mom has been making this for all of my time
on this earth and probably longer,
I can read between the lines.
- 2 ounces chocolate (note says ‘I use semi-sweet but you can use unsweetened’)
- 1 TBSP unsalted butter
- 1 cup sugar
- 2/3 cup light cream +/- depending upon consistency desired
- pinch of salt

Melt first two ingredients in a double boiler. (see note)

Remove from heat. Add sugar, cream, and salt

Stir until sugar is dissolved. If you need it to thicken a bit as I did, I put it back on the boiler pan and stirred a bit more.

Keep warm on low stove if serving immediately.
- If you don’t have a double boiler, you can make one by using a small sauce pan filled with a few inches of water and place a pyrex bowl (heat safe) in pan. On low/medium heat, the water will steam and melt the chocolate gently without burning. chose to use unsweetened chocolate
- I used 3/4 c. sugar for less sweetness
- as shown, a bit less than 2/3 c. light cream, put back on the heat to thicken then removed from heat to thicken further
- May store in airtight container in refrigerator for later use. Reheat in saucepan on low when ready to serve. No need to use double boiler for reheating, just keep heat low so sauce does not burn.
