Looking for something a little different to serve as an
appetizer for this holiday season?
Or any time of year for that matter…..
these bite-sized treats come together in a flash.
Honestly, this could be my dinner with a mixed
greens salad any time of the year!!!
Recipe as follows
Preheat oven to 400 deg F
Slice baguette into 1/2″ pieces
Peel a garlic clove and rub on each slice of bread
Arrange on baking sheet and toast until lightly browned
Meanwhile, stem, wash, and slice ~ 1# mushrooms (they shrink alot)
In a saute pan, add a smidge of neutral-flavored oil and bring to medium heat
Add mushrooms to sauté pan, stir and cook until most of the liquid exudes
Season with salt/pepper, add herbs of choice (thyme, parsley, oregano, or any combo)
Finally add ~ 1-2 TBSP balsamic vinegar to the pan and let reduce/thicken 30 sec to 1 min.
Remove from heat.
Spread a thin layer of fig jam, then ricotta on each piece of bread
Top with mushroom mixture.
Add some grated parm or shredded cheese and pop in oven a couple minutes for melting
Remove from oven
Drizzle with a balsamic vinaigrette (optional) and garnish with herbs.
