So, it was Saturday morning and I was feeling like making a nice ‘big’ breakfast, which means more than my usual scrambled egg or egg/cheese/sausage breakfast sandwich. Both are delicious and sustaining but it was the weekend, so I wanted to make something special.
I opened up my refrigerator and freezer and VOILA! I was going to make cinnamon french toast……What makes this a ‘frig to fabulous’ post is that I did not have to go to the grocery store to buy anything, I had all the ingredients I needed right in my kitchen.
Fresh cut strawberries, eggs, buttermilk, maple syrup, and butter in my frig, apple cinnamon bread and bacon in the freezer, and cinnamon, confectioner’s sugar (optional but it makes a nice presentation) and vanilla extract in my pantry. So I went to it and this is how it came together……
First, put bacon in a 425 deg oven on foil pan to cook to desired crispiness.
Then, put eggs, buttermilk, vanilla, and cinnamon in a bowl and whisk together.
Then I sliced up all the bread.
Next, I prepared the electric skillet (easier to control temperature) and set to 350 degrees to warm up. Once warmed, I add some butter to coat the pan, which gives the bread a nice flavor and butter crunchy edges.
Next, I worked in batches by putting two slices of bread in the egg mixture to coat completely and put into skillet. Continue as your skillet size allows. I had enough bread to make 8 pieces total in two rounds of cooking.
Once the bottom side is browned to your liking, flip over to brown the second side.
Finally, presentation time……..I put a little extra pat of butter on each slice, put some strawberries on top, drizzle with a little syrup and put a little dash of confectioner’s sugar for a little pizzazz, use a couple pieces of bacon on the side……………VOILA!!!!!
