This could be my entire dinner, it is so amazing with the first bite! SUMMER, HELLO!!
I know there are a gazillion recipes online for this but I will humbly share my version. There are really only three essential ingredients to make an amazing bruschetta – good quality bread, local garden tomatoes, and extra virgin olive oil.
I start by preheating the oven to 400 degrees. I slice some bread
(a baguette is nice because it starts with a crusty edge already but you can use any type of bread that has a nice chew to it). The thickness of the slice depends upon how crunchy you want your bruschetta to be. Place on cookie sheet and toast in oven until lightly toasted. Remove from oven. Spread on the garlic herb cheese in a thin or thick layer. Layer tomatoes over cheese. Salt lightly, and I also use coarse black pepper which elevates the tomatoes even more. Drizzle with the olive oil. Place back in oven for just 1 minute to warm up all that goodness. Remove from oven and drizzle with the balsamic vinaigrette and top with the garden grown basil that you have prepared in a
chiffonade style (stack, roll, slice thin).
There are so many variations for this. You can add a layer of prosciutto or other type of charcuterie, any type of cheese will work such as a mozzerella or ricotta, you can try different herbs, maybe a fig spread or a fig type drizzle at the end, instead of tomatoes you could use peaches (which I have with the ricotta and are amazing, i did saute the peaches before using on the bread).
Just go back to your foundation – bread, cheese, fruit
