shake up your rotation with this rice, it adds some complexity while being simple to prepare; it is even so good leftover!
Heat oil on medium heat in a medium-sized saucepan
Add shallots and pinenuts, stirring occasionally, for ~ 4 min.
Add carrots, orange zest, cardamom, and crushed red pepper.
Continue to occasionally stir, and cook for ~ 2 min.
Add chicken broth, honey, and salt.
Cover, lower heat and simmer ~12-15 min. Check occasionally toward end of cooking to ensure liquid is absorbed. You may need to add more water toward end of cooking, depending upon the type of rice and the level of heat.
Remove from heat and let sit for ~ 5 min. then fluff rice with a fork.
